This peated whisky from Glenallachie distillery was made using mainland peat sourced from St. Fergus in Aberdeenshire, which has a sweet, woody character. A higher degree of hearts from the distillation was used to amplify the phenol content – or smoky character – amounting to 70PPM, imparting aromas of bonfire smoke, charred oak and burnt caramel on the nose.
